Come visit north Wales. There an excuse to drive somewhere! You could see the castle scenery etc or even pop by and have a cup of tea or beeer or something!
Hmm, Coventry - Snowdonia - Newcastle and back again adds up to a little shy of 600 miles. Which should be doable on a tank of fuel :). And assuming a decent average speed is only about 10 hours of driving.
Give Geocaching a chance (http://www.geocaching.com - official site / http://en.wikipedia.org/wiki/Geocache - explanation). Before that me and my GF had the problem where to go for a weekends journey. It gave a distinctive edge on choosing our journey goals AND has a little kind of reward for oneself when you get the cache ;)
Also GeoCaches are normally at rewarding places in the nature with scenic views, great pieces of nature etc.
